Class, grace and opulence all go to describing the Hayfield
Manor, one of Ireland’s top five star hotels, tucked away in a quiet
corner of Cork City.
Situated in secluded leafy grounds, the Hayfield Manor
is the image of timeless style associated with Manor houses of the Georgian
era, so it will come as a great surprise to find it was built in 1996
rather than 1796! Great care has gone into the design of the Hayfield
Manor to accurately reproduce the graceful architectural features of a
large period manor house.
Inside the Hayfield’s features are also an elegant
reminder of a bygone age, the reception and Library are furnished with
sumptuous chesterfields and deep red carpets while the drawing room offers
refined comfort in light and airy surroundings where award winning afternoon
teas are served. The Hayfield also has an enclosed walled garden, which
is modelled on the gardens of Muckross House and is a delightful suntrap
during the summer months.
Each of the guest rooms at the Hayfield are individually
decorated to the very highest standards and are splendidly spacious. Incorporating
impeccable taste and exquisite design, the guest rooms boast handsome
marble bathrooms, fabulous period furnishings and the finest fabrics,
together with all the necessary modern facilities and sumptuous luxuries.
Dining at the Hayfield is a suitably gastronomic experience
which the Head Chef describes as ‘French, but Irish at heart with
select main dishes including; Whole Roasted Irish Lobster Flambé
with Whiskey and served simply with Fresh Organic Spring Baby Vegetables
and a Vanilla Sauce, and Tournedos of Wicklow Beef topped with Crème
Fraiche and Fresh Horseradish Braised Ox Cheek set on Scallion Potato
Puree, Port Braised Shallot. With an extensive wine cellar to compliment
its cuisine, it’s no wonder that the Hayfield’s restaurant
has won international praise.
The Hayfield also boasts an exclusive Health Spa where
residents can enjoy a wide range of facilities and beauty therapies to
invigorate, relax and revitalise. While close to the Hayfield you’ll
find two of Ireland’s most famous golf courses, Fota Golf Resort
and the Old Head Golf Links in Kinsale.
